Goats Milk Praline Ice Cream Affogato – De’Longhi Challenge

This year has been crazily busy for me so far. I started a new job and joined a gym in January and have been training for a half marathon in October in preparation for the London Marathon next year. I’ve been keeping up with this blog a couple of times a week and Jack and I have also been busy looking for and buying furniture for a flat that we bought last year, which we should be moving into within the next couple of months.

As I’ve been so busy I seem to be leaving everything until the very last minute. Take this challenge, for example. Jack and I decided what recipe we were going to do a couple of weeks ago but I only had the chance to buy all of the ingredients to make the ice cream at 9pm last night – so you can imagine what kind of a night and morning I’ve had. Not complaining, though – I did get to eat the most delicious affogato for breakfast.

We used the Flavour Thesaurus by Nikki Segnit for inspiration. If you haven’t been out and bought a copy yet, I highly recommend you do. It is a must have in the kitchen if you want to be a little experimental with your food. I used it for my stint in Britain’s Best Dish and it got me to the semi-final.

This recipe is fantastic for anyone who is dairy intolerant and the best thing is that it tastes just like normal dairy ice cream. The hazlenut praline adds a welcome crunch and sweetness and the coffee, made by the fantastic and utterly beautiful De’Longhi Vintage Icona Bar Pump coffee machine, adds a caffeine punch that is oh so welcome at any time of day.

Ingredients

For the praline
100g golden caster sugar
100g whole hazlenuts

For the ice cream
2 pints of goat’s milk
1 1/2 tsp vanilla paste
4 Burford Brown egg yolks
4 oz golden caster sugar
3 tsp cornflour

Method

Ice cream – first make the custard
1. Heat the goat’s milk and the vanilla paste over a low heat until simmering. Do not boil.

2. In a separate bowl, whisk egg yolks, cornflour and sugar together for a couple of minutes or so until sugar is almost dissolved.

3. When the milk starts to simmer, take it off the stove and pour it in with the egg and sugar mixture, and whisk continually. Return to the pan and stir over low heat with a wooden spoon until thickened.

Now for the praline

4. Heat the sugar and hazlenuts in a pan on a low heat and stir continuously until the sugar begins to caramelise and the nuts are coated. Once you reach this stage, pour out onto a greaseproof paper-covered baking sheet, sprinkle with sea salt flakes and leave to cool. Once set, smash the praline into pieces with a rolling pin.

5. Once you have a custard, place in the fridge until completely cool. Prepare your ice cream machine, mix the custard and praline together and churn to your machines instructions.

And to finish

6. Scoop the ice cream into a glass. Prepare a shot of espresso and pour over the ice cream straight away.

WIN herbs and spices from Gourmet Garden

Moving into my first rented flat with a friend in my second year of university was incredibly exciting. No more student halls, no more shared kitchens, no more noise keeping me up all night, no more mess (well, almost). I can positively say that I was a bad cook at this time in my life. My specialties, as most students can claim, were spaghetti bolognese and a steak sandwich. Or the odd jacket potato with cottage cheese, baked beans and salad. Oh dear. Luckily my friend was a good cook and every so often she would make the most amazing Thai chicken curry. I would beg her to make it for us and most of the time she caved in. I remember she used to use squeezy tubes of garlic, lemongrass and ginger. It was so easy and utterly delicious.

It wasn’t until recently that I was reintroduced to those very handy squeezy tubes. Gourmet Garden produces a wide range of herbs and spices that are simply washed, chopped and put into tubes. The amount of times I have bought fresh herbs, used a handful and had to throw the rest away when they start to go black is countless. So I was happy to take receipt of a few tubes last week.

I still marvel at the Internet. I’ve always been a bit of a technology geek and I distinctly remember the time when the Internet was first installed at home. I would sit in my dad’s study for hours at a time browsing and talking to friends on MSN (sad I know). But at the time I never would have imagined that I would be buying clothes, holidays and even food from the comfort of my own home. Technology never ceases to amaze me.

I’ve been toying with the idea of buying meat, fish and vegetables online for a while. After my trip to Riverford Organic Farm earlier in the year, I realised what a great way it is to shop. But having never taken the plunge to buy meat online before, I was happy to be contacted a few months back by Westin Gourmet, an online butchers that provides consumers with good quality cuts of meat at wholesale prices.

I held a dinner party at my house on Saturday and was able to serve a feast for eight people. Having never attempted to cook such a big piece of meat before, the size was a little daunting. But after following some rather good instructions from the BBC website, the meat came out of the oven rare, juicy, utterly tender and it went down a treat. The perfect centerpiece for any roast, I can’t recommend it enough. There was even some left over for a beef and horseradish sandwich the next day.

A couple of weeks ago, The Big Chopper was introduced to me. What is the big chopper I hear you say. It took me a couple of minutes to realise just what shape the two lockable chopping boards became when joined together (I think I’m one of the naive ones!) but when I did, it made me chuckle.

It’s a cleaver idea really. One board for meat, one for veg and when joined together it looks like… well, you can see what it looks like! I was asked to give one away and thought it would be a great idea, especially since the company is supporting the charity male cancer charity Orchid – 50% of online sales are being donated.

I have used mine a couple of times and they’re not just pretty (!!) but practical too. Simply lock to chop and unlock to store!

Glorious soup competition

At the tail end of last year I entered the Glorious Soup competition with a few fellow bloggers. The task? Create your own Brazillian inspired soup recipe. The prize? The winners soup would make it into the Glorious range. Pretty cool.

So I set to work on my recipe and after a bit of research had a soup that fit the bill. It consisted of Chicken, Quinoa, Sweet Potato, Coconut Milk and Spices.

The competition itself was fun – I made it down to the final 5 alongside Charlie Nelson (Eat My Nels), Michelle Minnaar (Greedy Gourmet), Carla Spuri (Can be bribed with food) and Danny Kingston (Food Urchin). I was invited to the cook off where our soups were judged by Lee Bennett, Head Chef at Le Pont de la Tour, Karen D’souza (a massive fan of the brand), food writer, broadcaster and photographer Tim Hayward and Matthew Owen from Cool Earth.

We arrived at the kitchens and it felt like a smaller scale Masterchef – our cooking stations were all set out for us, including rather nice Glorious aprons and chefs hats plus our recipe and a name card (Twitter profile picture included!)

We had around an hour and a half to cook and at the end the judges walked around the room, armed with spoons and tasted our creations. 20 minutes later we were told that a decision could not be made easily and that they had to go and test the recipes to see what would best fit in with their existing range.

A few days later an email landed in my inbox with bad news, I hadn’t made it down to the last two. But it was congratulations to Charlie Nelson (Eat My Nels) and Michelle Minnaar (Greedy Gourmet) who were to battle it out for the public vote at Taste of Christmas. We’re still waiting for details on the winner but I’m still wishing them the best of luck.

Recipe:

Ingredients

100g Quinoa
500g Chicken thighs, boneless
1 litre chicken stock
1 can coconut milk
2 red onions
3 garlic cloves
1 green chilli
1 red chilli
1 lime leaf
3 tbsp fresh corriander
1 lime
3 tbsp olive oil
250g (about small) sweet potatoes, cubed
1 teaspoon of tumeric

Method

1. Heat olive oil in a pan and fry onions on a medium heat for 8 minutes or until translucent
2. Add chilli, garlic, turmeric and fry for a further minute
3. Add coconut milk, sweet potato, chicken thighs, chicken stock and lime leaf. Bring to the boil and simmer for 10 minutes or until the chicken is cooked through and sweet potato is soft
4. Meanwhile, place quinoa in a pan with the cold water. Bring to the boil and simmer for 8-10 minutes (you want the quinoa to have a slight crunch)
5. Drain any remaining water from the quinoa and add to the soup along with coriander and lime juice
6. Serve with fresh chopped red chilli

Green & Blacks search for a Taste Assistant

Have you heard? Green and Blacks have launched a nationwide search to find a brand new Taste Assistant! The lucky candidate will work along Head of Taste, Micah Carr-Hill and will be responsible for developing new flavour combinations for the brand. Sound good? You’ll get to travel the world to source the very best ingredients and devise new products. Is this your idea of a dream job? Then what are you waiting for, enter now!

The job won’t come easy though, Micah is looking for the person that has the ultimate taste buds as well as smell. He’s looking for someone that fully understands the difference between taste and flavour – to enter simply head to www.pieceofgreenandblacks.co.uk. Closing date for entries is 16th December 2010. The successful candidate is expected to take up their role early 2011.

I am a self confessed chocoholic. I can’t go a day without eating at least a teeny bite of the delicious brown stuff. Green & Blacks Creamy Milk is my bar of choice so imagine my delight when I found that Green & Blacks were hosting a bloggers event to coincide with the search for the Taste Assistant.

The event was held at the lovely Miele Gallery in Central London and there were three competitions to take part in on the evening. My boyfriend and I took part in the 15:15 challenge. What is this I hear you cry? We had £15 to spend on ingredients to create any dish that we liked but here’s the catch – we only had 15 minutes to cook it from scratch! There were 9 contestants in total and each person created something incredible in the allocated time. The dishes were judged on the taste element (obvioulsly) and Micah wanted to see great flavour combinations that exploded your taste buds when hitting the mouth. I went for a Lemon and Lime Cheesecake with an Oreo Biscuit Base

and Jack opted for Pan fried Scallops wrapped in Pancetta with Pesto and Capers.

Each contestant had their own cooking station with a helper from the Miele Gallery. It was a little nerve wracking because the guests that weren’t cooking were watching intently!

During the cook off, guests could enter the other two competitions of the evening, both to test the taste buds of course! The first was the ganache test – you had to taste two ganaches and write down as many ingredients as you could decipher. The second test was tasting the flavours that were present in two cocktails.

I have to admit, I realised that my sense of taste isn’t the greatest. I had difficulty figuring out what tastes were present in either. I got a couple right but that’s not nearly enough if I wanted to apply for the role of Taste Assistant. I was too busy cooking and watching others cook to enter the ganache test and by the time I realised, the answers were alreay been looked at! I definitely don’t think I would have come top anyway!

The winner of the cocktail taste test was the lovely Jennifer from Chocolate Ecstacy Tours and the winner of the ganache taste test was the equally as lovely MiMi from Meemalee’s Kitchen.

The dishes from the 15:15 challenge were all lined up and Micah, armed with a fork, set out to try each dish. He gave nothing away as he slowly tasted each dish and moved onto the next. Each contestant stood grinning as he took a mouthful of their creation.

After much deliberation, the winner was announced. Drum roll please…….. MiMi!!! She made a fantastic Japanese dish using linguine with fish roe and wild mushrooms. The flavours were great – I really can’t remember exactly what was in it but it was delicious!

A round of applause was followed by tears of joy and a quick photoshoot. Doesn’t she look so happy!

Two more dishes were highly commended – Jennifer’s mille feuille and the rather scrumptious looking piece of beef, which according to Micah was just a little bit too spicy. YUM!

I had an absolutely fantastic evening and got to walk away with a gift – a Green & Blacks box containing 15 (yes, 15) different bars of Green & Blacks, a bottle of wine, a USB stick and my very own taste test kit. I was happy as larry walking out of there.
