Goats Milk Praline Ice Cream Affogato – De’Longhi Challenge

This year has been crazily busy for me so far. I started a new job and joined a gym in January and have been training for a half marathon in October in preparation for the London Marathon next year. I’ve been keeping up with this blog a couple of times a week and Jack and I have also been busy looking for and buying furniture for a flat that we bought last year, which we should be moving into within the next couple of months.

As I’ve been so busy I seem to be leaving everything until the very last minute. Take this challenge, for example. Jack and I decided what recipe we were going to do a couple of weeks ago but I only had the chance to buy all of the ingredients to make the ice cream at 9pm last night – so you can imagine what kind of a night and morning I’ve had. Not complaining, though – I did get to eat the most delicious affogato for breakfast.

We used the Flavour Thesaurus by Nikki Segnit for inspiration. If you haven’t been out and bought a copy yet, I highly recommend you do. It is a must have in the kitchen if you want to be a little experimental with your food. I used it for my stint in Britain’s Best Dish and it got me to the semi-final.

This recipe is fantastic for anyone who is dairy intolerant and the best thing is that it tastes just like normal dairy ice cream. The hazlenut praline adds a welcome crunch and sweetness and the coffee, made by the fantastic and utterly beautiful De’Longhi Vintage Icona Bar Pump coffee machine, adds a caffeine punch that is oh so welcome at any time of day.

Ingredients

For the praline
100g golden caster sugar
100g whole hazlenuts

For the ice cream
2 pints of goat’s milk
1 1/2 tsp vanilla paste
4 Burford Brown egg yolks
4 oz golden caster sugar
3 tsp cornflour

Method

Ice cream – first make the custard
1. Heat the goat’s milk and the vanilla paste over a low heat until simmering. Do not boil.

2. In a separate bowl, whisk egg yolks, cornflour and sugar together for a couple of minutes or so until sugar is almost dissolved.

3. When the milk starts to simmer, take it off the stove and pour it in with the egg and sugar mixture, and whisk continually. Return to the pan and stir over low heat with a wooden spoon until thickened.

Now for the praline

4. Heat the sugar and hazlenuts in a pan on a low heat and stir continuously until the sugar begins to caramelise and the nuts are coated. Once you reach this stage, pour out onto a greaseproof paper-covered baking sheet, sprinkle with sea salt flakes and leave to cool. Once set, smash the praline into pieces with a rolling pin.

5. Once you have a custard, place in the fridge until completely cool. Prepare your ice cream machine, mix the custard and praline together and churn to your machines instructions.

And to finish

6. Scoop the ice cream into a glass. Prepare a shot of espresso and pour over the ice cream straight away.

7. Enjoy!

Nora Ephron (When Harry Met Sally, Sleepless in Seattle, You’ve Got Mail), one of the greats of the film and comedy world, sadly passed away last year. Her best films became cultural moments, with characters, scenes and lines that live far beyond the films themselves.

From 24th-27th January, The Loco Film Festival is focusing on women in comedy and has teamed up with The Lexi Cinema for a special tribute to Nora. The Ephrathon, on Sunday 27th January, will showcase three of her best-loved films, one from each era of her career: Heartburn (starring Meryl Streep and Jack Nicholson), Sleepless in Seattle and her award-winning final film Julie and Julia, which stars Streep alongside Amy Adams and Stanley Tucci.

Guests can also take part in a fruit pie competition, which will be judged by Sophie Grey of Crazy Baker. The winner will receive a signed copy of Sophie’s book ‘Let’s Make Whoopies’ and a year-long membership for The Lexi Cinema.

WIN herbs and spices from Gourmet Garden

Moving into my first rented flat with a friend in my second year of university was incredibly exciting. No more student halls, no more shared kitchens, no more noise keeping me up all night, no more mess (well, almost). I can positively say that I was a bad cook at this time in my life. My specialties, as most students can claim, were spaghetti bolognese and a steak sandwich. Or the odd jacket potato with cottage cheese, baked beans and salad. Oh dear. Luckily my friend was a good cook and every so often she would make the most amazing Thai chicken curry. I would beg her to make it for us and most of the time she caved in. I remember she used to use squeezy tubes of garlic, lemongrass and ginger. It was so easy and utterly delicious.

It wasn’t until recently that I was reintroduced to those very handy squeezy tubes. Gourmet Garden produces a wide range of herbs and spices that are simply washed, chopped and put into tubes. The amount of times I have bought fresh herbs, used a handful and had to throw the rest away when they start to go black is countless. So I was happy to take receipt of a few tubes last week.

I still marvel at the Internet. I’ve always been a bit of a technology geek and I distinctly remember the time when the Internet was first installed at home. I would sit in my dad’s study for hours at a time browsing and talking to friends on MSN (sad I know). But at the time I never would have imagined that I would be buying clothes, holidays and even food from the comfort of my own home. Technology never ceases to amaze me.

I’ve been toying with the idea of buying meat, fish and vegetables online for a while. After my trip to Riverford Organic Farm earlier in the year, I realised what a great way it is to shop. But having never taken the plunge to buy meat online before, I was happy to be contacted a few months back by Westin Gourmet, an online butchers that provides consumers with good quality cuts of meat at wholesale prices.

I held a dinner party at my house on Saturday and was able to serve a feast for eight people. Having never attempted to cook such a big piece of meat before, the size was a little daunting. But after following some rather good instructions from the BBC website, the meat came out of the oven rare, juicy, utterly tender and it went down a treat. The perfect centerpiece for any roast, I can’t recommend it enough. There was even some left over for a beef and horseradish sandwich the next day.

A couple of weeks ago, The Big Chopper was introduced to me. What is the big chopper I hear you say. It took me a couple of minutes to realise just what shape the two lockable chopping boards became when joined together (I think I’m one of the naive ones!) but when I did, it made me chuckle.

It’s a cleaver idea really. One board for meat, one for veg and when joined together it looks like… well, you can see what it looks like! I was asked to give one away and thought it would be a great idea, especially since the company is supporting the charity male cancer charity Orchid – 50% of online sales are being donated.

I have used mine a couple of times and they’re not just pretty (!!) but practical too. Simply lock to chop and unlock to store!
